Winter Waters is partnering with The Tavern at Heathman for a sea vegetable-centric 7-course dining experience. Join us Thursday, September 21st for a celebration of local, sustainable (and regenerative) seafood featuring partners Oregon Seaweed and Blue Evolution. Also featured will be fresh fish from Oregon Albacore Tuna, which is currently at the peak of its season.
Diners can expect a 7-course exploration of Oregon’s oceanic agriculture, with dishes such as dulse and zaatar-crusted albacore loin with tahini vin and a pickled seaweed tabouli salad, and 20-day dry-aged duck breast with dulse kimchi.
The dinner experience is $90 all-inclusive, with an optional beverage pairing for $45. Beverage pairings will celebrate both Oregon wineries and Portland cocktail culture, with an emphases on seaweed as a component.
10% of proceeds will benefit Oregon Kelp Alliance in support of their mission to raise awareness of the critical role kelp forests play in marine habitation, carbon sequestration, and the economy of coastal communities.
