At the Heathman Hotel, our food and drink offerings are inspired by Pacific Northwest flavors. With James Beard award-winning chef and proprietor Vitaly Paley at the helm, Headwaters features local produce and seafood. The Russian Tea Room serves traditional Russian tea, with a Portland twist.
Showcasing ingredients from Oregon’s bounty
Named for “the source”, Headwaters showcases local ingredients from Oregon’s diverse bounty, from farm to sea. The restaurant is headed up by chef/owner Vitaly Paley, his long-time wife/partner Kimberly Paley, and Operations Director Garrett Peck. Chef Paley is a recipient of the 2005 James Beard Foundation Best Chef Pacific Northwest award, was nominated as a 2012 and 2013 James Beard Foundation Semi-finalist for Outstanding Chef, and was a victor on Food Network’s popular series Iron Chef America.
Traditional Russian tea, Portland style
Headwaters continues the Heathman’s long tradition of tea service in the Tea Court. Featured teas are a compendium of Smith Teamaker custom blends and greatest hits. The menu by Chef Vitaly Paley and Pastry Chef Megan Jeans pays homage to the rich history of the Heathman while adding a Russian flare that speaks to Paley’s heritage by highlighting dishes passed down from his grandmother.
Russian Tea is served on Saturdays at noon and 2:30 p.m. Reservations are required, must be made 48 hours in advance and are not available online. Call (503) 790-7752 to reserve.
Reservations are required and are only available through Resy.
