Named for “the source”, Headwaters showcases local ingredients from Oregon’s diverse bounty, from farm to sea. The restaurant is headed up by chef/owner Vitaly Paley, his long-time wife/partner Kimberly Paley, and Operations Director Garrett Peck.
Jacobsen Salt Co. is a local purveyor that, when it opened in 2011, became the first company to harvest salt in the Pacific Northwest since Lewis and Clark built a salt works in 1805. Guests at The Heathman will find its salt in their rooms’ honor bars.
Every guest room features teas from Steven Smith Teamaker Company. The late Steven Smith, born and raised in Portland, made a name for himself in the tea world as a tea shaman, cultivating a rich understanding of teas.
We partner with local distilleries in the Portland region, and provide beverage tastings every day from 5 to 6 p.m.
Every honor bar at The Heathman is stocked with Bee Local honey. The company is committed to sustainable beekeeping, and produces a variety of small-batch honeys—each jar traceable back to a specific hive. TSA-friendly jars of the hyper-local product are available to bring home as well, so you can bring home a Heathman souvenir.
